I've bought Libeco linen fabrics for clothes and have been very happy with the quality.

I fully support this recommendation. I've had a sheet made up of the 'Premier Deluxe' linen and it's turned out great. I also purchased a Damask tablecloth from them and I must say it looks sublime. It doesn't hurt, either, that their responsiveness and customer service are exemplary.

I can recommend http://www.vintage-mood.co.uk/ for great prices on Irish linen for bedding especially on orders of over 10 metres.

I cannot really say that I've tried all linens on the market, but so far I've been exceedingly happy with my Yves Delorme goods. No pilling, shrinkage, loss of colour, rough spots or such after five years. Highly recommended.

I would like to know if there is a tangible difference in quality between Irish linen and European linen. From what I have read the Irish manufacturers tend to advocate that there is a difference, while the European linen manufacturers are either silent on the subject or of the opinion that the quality is on par...

Linen is fantastic in the summer but, in my experience, requires more maintenance - great if you have servants or a wife who loves ironing.

Indeed. I am not married...
I do like to iron a shirt every now and then - it helps me put my thoughts in order - but ironing linen sheets would feel like a punishment.

Ironing bed linen wouldn't be a terrible chore if ones board was of sufficient size. Anytime I have ironed bedding, the board is never long enough to accommodate at least half of the sheet.
