Does anyone know if EG has different leather choices other than calf in their custom (not bespoke) program?

Until recently, no exotics. They didn't want to suck the really high-demand buyers away from the bespoke program. That may change with Tony's departure.

How about different finishes on calf; grainy or something......?

Oh, sure. Willow grain, scotch country, etc. No sweat. Just no shark, kudu, cordovan...

Are the textured finishes for country and the smooth calf for city?

Do the textured finishes work best with certain style shoes and lasts?

Textured for the country and smooth for the city is a fairly good rule to go by.
