I tend to do a lot of hunting for high quality secondhand clothing. Of course, what is possible for alterations can set limits based on preferences. My question is whether a zip fly trouser can be altered to button fly.

This can be achieved, but there's a couple of "depends"
#1. It depends if you have any extra fabric. If so, no problem.
If not:
#2. It depends if you do not mind the fabric on which the buttonholes will be made is from a different fabric.
If you do, then this alteration cannot be done.
