The concept is excellent, Tom, and I am sure that you will do very well!
A tasting menu matched with wines is something that I always look for but rarely find.
Plus, designing Domaine Hudson as a place that you yourself would like to go to and which matches your standards, helps ensures the integrity of the whole enterprise.
Finally, heading up front of house will let you wear all of your fine clothes and set the tone for Domaine Hudson. What could be better....?!

Below is a copy of our menu, which is still being tweaked. This copy does not include the desserts, cheeses and cured meat selections. However, it does give you a sense of where we are going in terms of style and pricing. substantially all of the small plates can be ordered as entrees for approximately 2x the small plate price.

Magnificent. You are in good company. Annabell's has some marvellous 1930s cartoons in the men's lavatories, and the O&C sports some which feature the club.
The Grand Opening will be Tuesday 11/1/2005. We received all the final permits and our liquor license yesterday!!!!!!!!!!!!!!!!!!!!

My wife and I went to Tom's soft opening and we really enjoyed his hospitality. He was so cautious in preparing us for problems and "kinks," but the place ran smoother than most well-seasoned restaurants.
His restaurant has a gimmick: he serves fractions of glasses of wine so that you can try many different sorts: these pours are very inexpensive, a few dollars. This works for my wife and I very well because, first, we know nothing about wine and this lets us try different types and compare them and second, we do not tolerate very much alcohol.
But the food was exceptional, and though it was eclectic/continental and I am more of an "ethnic/spicy" kind of guy, we really enjoyed everything.
The decor is also really lovely and the bar is inviting, a great place to meet someone for drinks (or find a mistress for mischief).
I really like Delaware and Wilmington, it is a sort of city disguised as suburbia, and if you are in the area, I recommend stopping by Tom's place if you can.

Our permanent website is now up. It includes our menu and wine list. The wine list is a little light as about 30% of my wines I have not been able to take possession of yet.
