I recently ordered a MTM vest, and, being my first vest, I was curious as to what type of fittings go with it.

A friend of mine gave me a pocket watch for college graduation--I'd like to wear it, but I'm not sure of the proper way to do so (does the clasp just hook to a button hole and the watch goes in the pocket--simple as that?).

Also, in many photos on this forum, I have seen some sort of chain, which looks like something other than a pocketwatch chain (it's symmetrical) that forms loops on both sides of the buttons down the middle. What is that?

Depending on who you ordered your vest from you may or may not have a specific hole for a watch chain.

The symmetrical looping you refer to is from a single chain with a watch fob attached to one side and (of course) the watch attached to the other. The fob and the watch are held in the right and left welt pockets. The chain passes through either the watch chain hole or button hole.

A fob is just a piece of metal that anchors the watch should you drop it.

This is how I understand this to work, but I stand to be corrected ;)

Yes,
you usually have an extra hole in the vest as Chris mentions, between buttons 4 and 5, non keyhole type like on the lapel for the chain.
