There is a very interesting series of audio slide shows named "disappearing crafts" and produced by Guardian.

English craftsmanship at its best... highly recommended.

I especially enjoyed the pictures of the cutter. I didn't know the silk was cut with an actual knife.

There's also another disappearing craft I'd like to add: making pleated yokes by hand on an academic/legal gown. They either use a pleating strip or a machine to do them nowadays whilst me and my colleagues do it by hand which takes hours more work but the results are much better, expecially on a curved/arched yoke.
