padding and canvas

From what I know a tailor usually prefers a certain size of padding and canvas, cf. english-cut. Is it safe to ask him to minimize padding and canvas, making a more natural coat? It probably depends on the tailor, but what do you say?

Worth a discussion. You reference Thomas Mahon's shop-- he uses several coatmakers, each with a different approach to the amount of padding, etc. And all this within the context of a soft, drape style.

I have found four real tailors in Copenhagen. They all do both cutting and sewing themselves. 100 percent old school. I have ordered a sports jacket from one of them, the youngest but very simpatico. He can minimize padding, but I am not sure about canvas. I am in doubt how far I shall push him to move from a structured jacket to a soft one ...
