Dining in Sydney

Gents,
I have recently returned for a 1 month trip to Sydney and ate at some very nice restaurants. Two particular favourites that I would recommend are-

Superb food made from superb ingredients - the style is "modern Australian" and draws influences from around the globe. The restaurant's decor is remarkably tasteful. They make the best soufflé I've ever had. Whilst Est. may lack the superb view boasted by some of its rivals, I doubt anyone would be disappointed by the food.

Sardinian fare prepared - once again - from superb fresh ingredients. I would recommend the zuppa del pescatore to any lover of seafood. The pannacotta alla vaniglia e abbamele was also worthy of mention. Ask for a table with a view of Freshwater beach.
