I was lucky to have had dinner at the Königshof Restaurant in Munich a few weeks ago, and my host ordered Billecart-Salmon to start the evening. I'd had never had it before (apparently Danny Meyer stocks it in his places here in New York), and it was quite nice -- lots of green apple.

One of the truly great Champagnes. Try their Rose if you have a chance, it is quite nice. If you can find the 82, 86, 88, 90 vintages, buy them!
A 1959 Billecart Salmon won the "Champagne tasting of the Century", a tasting of all the great bubblies of the last century.
Cheers

Thanks. I did try the Rose last week, and it was delightful. The brand is a little difficult to find in New York, but not impossible. The "Go To" places don't stock it. Beacon Wines on the Upper West Side carries it of all places, and it is one of the very few bargains at newest iteration of The Russian Tea Room. (Ok, I admit I eat there; it is close to Carnegie Hall.)
