Perigord Noir

I spend a bit of time each year in the abovementioned area of France. Since I am always a guest, I have not had much opportunity to explore restaurants, vineyards etc that my friends and family do not already know. Does anybody here have any recommendations for restaurants, sidetrips or miscellany? Also, does anybody have suggestions for things to do in the city of Bordeaux?
