I was brought up in the belief that:
Wing collar=white tie/barrister/Eton college uniform
Turned down collar = DJ /suit.....comfortable and easy

I have not yet found cause to change my mind, and always feel correctly dressed.

A turn-down collar with a dress coat would look awkward, while they're certainly accepted as a casual alternative with dinner jackets. If you're less comfortable with a wing collar, be it physically, especially with a stiff detachable one, or mentally, eg if it's not the grand opera opening but a dinner among friends, nobody will raise an eyebrow if you take a shirt with a turn-down collar with your dinner jacket. But the other way around, wing collars (and white waistcoats, by the way) are by no means restricted to white tie.
