One of the enduring mysteries to me of bespoke is how to determine the proper buttoning point....
Where should it be, how do you determine it, is their a golden mean?

I think you will find a good deal of discussion of this point on the site. To summarize, there is no golden rule or magic formula. Find someone with a good eye to help you while you develop your own. A tailor can have a good eye, but most do not.
Start at the bottom of the ribcage. If you have a short torso and long legs, you may want to move down from the bottom of the ribcage towards the natural waist. If you have short legs and a long torso, the bottom of the ribcage should be just about right. If your body is in perfect equilibrium (how fortunate), you will look between the natural waist and bottom of ribcage.
