Rereading this thread it strikes me that we are not separating out the types of detachable collars. There are both hard collars, in England these are typically winged collars and white, and soft collars (now extremely rare) that are usually self coloured. They aren't Tweed but on the Macy's web site on the front page of the suit section there are a couple of SB peak lapelled suits by Sean John (whoever he is).

As TVD said, pick a tailor and work with him. Initially you will need to work with him to get the fit right, but after the first few suits he should have your pattern spot on and then it just becomes a matter of details on a particular suit. Personally I dispense with the first fitting as my pattern...

You might want to look to India, I believe they are still used and manufactured there according to a tailor friend of mine.
